  • โ€ข onion
  • โ€ข garlic clove
  • โ€ข curry paste
  • โ€ข fresh ginger
  • โ€ข sweet potatoes
  • โ€ข red bell pepper
  • โ€ข chicken stock
  • โ€ข rum
  • โ€ข salt
  • โ€ข sour cream
  • โ€ข sweet paprika

๐Ÿ“ Instructions

  1. 1 soup:
  2. 2 in a soup pot , heat oil over medium-low heat
  3. 3 add curry paste and onions and cook for 4 minutes , stirring occasionally
  4. 4 reduce heat if necessary
  5. 5 add garlic clove and ginger and cook for another 1-2 minutes
  6. 6 add sweet potatoes and pepper
  7. 7 mix
  8. 8 add stock
  9. 9 cook for 15 minutes or until vegetables are very soft
  10. 10 puree the ingredients in batches in a blender or puree the whole amount directly in the pot with a hand blender
  11. 11 check if you like the consistency of the soup
  12. 12 add more stock or water if desired and adjust the seasonings
  13. 13 you can add more curry paste if desired , but most pastes need to be cooked first before adding to a dish
  14. 14 add rum if using
  15. 15 serve:
  16. 16 serve in individual bowls and top each with a tablespoon of sour cream and a sprinkle of sweet paprika
