📝 Instructions
- 1 place first four ingredients in a pot
- 2 add just enough water to cover the chicken
- 3 bring to a slow boil , cover , lower heat to maintain a simmer and cook until done , about 20 - 25 minutes
- 4 if using a whole chicken
- 5 cook approximately 50 - 60 minutes
- 6 remove chicken from pot , let cool and shred
- 7 if using a whole chicken
- 8 remove meat from bones and shred
- 9 reserve broth
- 10 in a large pan , melt butter over low heat
- 11 add the remaining ingredients listed , except tomato sauce , salt , and broth
- 12 saut until soft , about 10 minutes
- 13 stir in shredded chicken and briefly saut
- 14 add tomato sauce and cup of reserved broth
- 15 salt to taste
