- • olive oil
- • fresh lime juice
- • cumin
- • coriander
- • cilantro
- • scallions
- • black beans
- • diced tomatoes
- • bell pepper
- • jalapeno chiles
- • salt and pepper
📝 Instructions
- 1 cook the quinoa in the water
- 2 allow to cool slightly
- 3 in a large bowl , combine the oil , lime juice , cumin , coriander , cilantro and scallions
- 4 stir in the beans , tomatoes , bell peppers and chilies
- 5 add the cooled quinoa
- 6 season with salt and pepper to taste
- 7 serve cold
