🥘 Ingredients

  • quinoa
  • water
  • olive oil
  • fresh lime juice
  • cumin
  • coriander
  • cilantro
  • scallions
  • black beans
  • diced tomatoes
  • bell pepper
  • jalapeno chiles
  • salt and pepper

📝 Instructions

  1. 1 cook the quinoa in the water
  2. 2 allow to cool slightly
  3. 3 in a large bowl , combine the oil , lime juice , cumin , coriander , cilantro and scallions
  4. 4 stir in the beans , tomatoes , bell peppers and chilies
  5. 5 add the cooled quinoa
  6. 6 season with salt and pepper to taste
  7. 7 serve cold
