  • onion
  • canned jalapeno slices
  • fresh tomatoes
  • kernel corn
  • black beans
  • taco seasoning mix
  • corn tortillas
  • nonfat sour cream
  • reduced-fat mexican cheese blend
  • fresh cilantro

📝 Instructions

  1. 1 brown ground beef and chopped onions in large skillet
  2. 2 brown 10 to 12 minutes or until thoroughly cooked , stirring constantly
  3. 3 drain well and rinse with warm water to remove all fat
  4. 4 return beef / onions to skillet
  5. 5 add corn , black beans , tomatoes , chilies / jalapenos and taco seasoning mix
  6. 6 mix well
  7. 7 reduce heat
  8. 8 simmer 5 minutes
  9. 9 meanwhile spray 12x8-inch baking dish with nonstick cooking spray
  10. 10 cut each tortilla in half
  11. 11 place 8 halves in bottom of sprayed baking dish , overlapping slightly
  12. 12 spoon half of beef mixture evenly over tortillas
  13. 13 spoon sour cream over beef mixture
  14. 14 spread evenly
  15. 15 top with remaining 8 tortilla halves and remaining beef mixture
  16. 16 heat oven to 350f
  17. 17 bake at 350f for 25 minutes
  18. 18 remove from oven
  19. 19 sprinkle with cheese
  20. 20 cover
  21. 21 let stand 5 minutes or until cheese is melted
  22. 22 sprinkle with chopped cilantro and serve with fresh chopped lettuce , tomatoes , salsa , black olives , etc /
