🥘 Ingredients

- • canned jalapeno slices
- • fresh tomatoes
- • kernel corn
- • black beans
- • taco seasoning mix
- • corn tortillas
- • nonfat sour cream
- • reduced-fat mexican cheese blend
- • fresh cilantro
📝 Instructions
- 1 brown ground beef and chopped onions in large skillet
- 2 brown 10 to 12 minutes or until thoroughly cooked , stirring constantly
- 3 drain well and rinse with warm water to remove all fat
- 4 return beef / onions to skillet
- 5 add corn , black beans , tomatoes , chilies / jalapenos and taco seasoning mix
- 6 mix well
- 7 reduce heat
- 8 simmer 5 minutes
- 9 meanwhile spray 12x8-inch baking dish with nonstick cooking spray
- 10 cut each tortilla in half
- 11 place 8 halves in bottom of sprayed baking dish , overlapping slightly
- 12 spoon half of beef mixture evenly over tortillas
- 13 spoon sour cream over beef mixture
- 14 spread evenly
- 15 top with remaining 8 tortilla halves and remaining beef mixture
- 16 heat oven to 350f
- 17 bake at 350f for 25 minutes
- 18 remove from oven
- 19 sprinkle with cheese
- 20 cover
- 21 let stand 5 minutes or until cheese is melted
- 22 sprinkle with chopped cilantro and serve with fresh chopped lettuce , tomatoes , salsa , black olives , etc /
