📝 Instructions
- 1 combine first 5 ingredients
- 2 beat well
- 3 mix flour , soda , salt and cinnamon
- 4 add to creamed mixture
- 5 stir well
- 6 add carrots , walnuts , pineapple and coconut
- 7 stir well
- 8 pour batter into greased and floured 13x9 baking pan
- 9 bake at 350 for 55 minutes , or until pick comes out clean
- 10 buttermilk glaze: combine first 5 ingredients in large saucepan
- 11 bring to a boil
- 12 cook 4 minutes on medium heat
- 13 remove from heat
- 14 add vanilla
- 15 pour buttermilk glaze over warm cake
- 16 let cake cool
- 17 cream cheese frosting: mix cream cheese and butter
- 18 beat until smooth
- 19 gradually add sugar , beating until light and fluffy
- 20 stir in vanilla
- 21 spread cream cheese frosting on top of cooled cake
