  • vegetable oil

  • vanilla

  • baking soda
  • salt
  • cinnamon

  • walnuts
  • crushed pineapple
  • coconut
  • butter
  • light corn syrup
  • cream cheese
  • powdered sugar

📝 Instructions

  1. 1 combine first 5 ingredients
  2. 2 beat well
  3. 3 mix flour , soda , salt and cinnamon
  4. 4 add to creamed mixture
  5. 5 stir well
  6. 6 add carrots , walnuts , pineapple and coconut
  7. 7 stir well
  8. 8 pour batter into greased and floured 13x9 baking pan
  9. 9 bake at 350 for 55 minutes , or until pick comes out clean
  10. 10 buttermilk glaze: combine first 5 ingredients in large saucepan
  11. 11 bring to a boil
  12. 12 cook 4 minutes on medium heat
  13. 13 remove from heat
  14. 14 add vanilla
  15. 15 pour buttermilk glaze over warm cake
  16. 16 let cake cool
  17. 17 cream cheese frosting: mix cream cheese and butter
  18. 18 beat until smooth
  19. 19 gradually add sugar , beating until light and fluffy
  20. 20 stir in vanilla
  21. 21 spread cream cheese frosting on top of cooled cake
