  • boneless skinless chicken thighs
  • andouille sausage
  • onion
  • celery ribs
  • green bell pepper
  • red bell pepper
  • dried thyme
  • dried oregano
  • sweet paprika
  • salt
  • cayenne pepper
  • long grain rice
  • tomatoes
  • chicken broth
  • medium shrimp
  • fresh parsley
  • green onions

📝 Instructions

  1. 1 preheat oven to 350 degrees f
  2. 2 in a large pan or dutch oven , brown chicken in hot oil on both sides
  3. 3 remove and drain
  4. 4 add andouille , onion , celery , bell pepper , thyme , oregano , paprika , salt , and cayenne pepper to the pan , cooking and stirring for about 5 minutes until onions are tender
  5. 5 add rice , tomatoes with juice , and broth
  6. 6 bring to a boil
  7. 7 place rice mixture in a baking dish or oven-proof casserole
  8. 8 top with chicken
  9. 9 cover and bake at 350 degrees f for 40-45 minutes or until rice and chicken are done and tender
  10. 10 stir in shrimp , parsley , and green onions
  11. 11 cover and cook 5-8 minutes longer or until shrimp curl and turn bright pink and serve
