  • boneless skinless chicken breasts
  • dijon mustard
  • egg
  • dry breadcrumbs
  • poultry seasoning
  • garlic powder
  • seasoning salt
  • olive oil
  • chicken broth
  • fresh lemon juice
  • salt
  • lemon slices
  • fresh parsley

📝 Instructions

  1. 1 in a small bowl or shallow dish whisk together mustard and eggs
  2. 2 set aside
  3. 3 combine the dry bread crumbs with poultry seasoning , garlic powder and seasoning salt
  4. 4 spread on a piece of waxed paper
  5. 5 dip the breasts firstly in egg / mustard mixture then coat well with the crumb mixture , pressing downs with hands to adhear the crumbs to the breast
  6. 6 heat the olive oil in a skillet over medium heat
  7. 7 add in the chicken and cook for about 5 minutes on each side , or until it is no longer pink inside
  8. 8 remove and transfer to a plate to keep warm
  9. 9 for the glaze
  10. 10 in the same skillet add in the broth , lemon juice and 1 / 4 teaspoon salt bring to a boil scraping any brown bits from the pan
  11. 11 add in lemon slices and parsley
  12. 12 mix to combine for about 1 minute
  13. 13 spoon the glaze / sauce over chicken
