🥘 Ingredients

  • all-purpose flour
  • baking powder
  • salt
  • white sugar
  • egg
  • milk
  • vegetable oil

📝 Instructions

  1. 1 preheat oven to 400f
  2. 2 stir together the flour , baking powder , salt and sugar in a large bowl
  3. 3 make a well in the center
  4. 4 in a small bowl or 2-cup measuring cup , beat egg with a fork
  5. 5 stir in milk and oil
  6. 6 pour all at once into the well in the flour mixture
  7. 7 mix quickly and lightly with a fork until moistened , but do not beat
  8. 8 the batter will be lumpy
  9. 9 do not overmix
  10. 10 this will create tough / heavy muffins
  11. 11 pour the batter into paper lined muffin pan cups
  12. 12 variations: blueberry muffins: add 1 cup fresh blueberries
  13. 13 raisin muffins: add 1 cup finely chopped raisins
  14. 14 date muffins: add 1 cup finely chopped dates
  15. 15 cheese muffins: fold in 1 cup grated sharp yellow cheese
  16. 16 bacon muffins: fold 1 / 4 cup crisp cooked bacon , broken into bits
  17. 17 bake for 25 minutes , or until golden
