🥘 Ingredients

  • pie pastry
  • raisins
  • butter
  • brown sugar
  • salt
  • corn syrup
  • egg
  • vanilla

📝 Instructions

  1. 1 prepare muffin pans by rolling out pie dough and cutting 4-inch circles
  2. 2 fit dough circles into muffin cups
  3. 3 set aside in fridge until ready to fill
  4. 4 in a small bowl , place raisins and cover with hot tap water
  5. 5 let stand on the counter for 30 minutes
  6. 6 in a large bowl , using a wooden spoon , mix together the soft butter , brown sugar , salt and corn syrup
  7. 7 stir well until sugar is dissolved and butter is creamed
  8. 8 add egg and vanilla and mix well
  9. 9 drain raisins
  10. 10 retrieve tart shells and divide raisins equally into all shells
  11. 11 then divide butter mixture into all tarts
  12. 12 bake at 400f for 15-20 minutes
  13. 13 filling will be lightly browned but still bubbling
